I know you mentioned there's no 48,000 Hz option but that's due to driver constriction. It has to be set at 48,000 Hz to work with Rocksmith. I see you mentioned your fast track pro is currently set to 44,000 Hz. That's about all I can offer without a more detailed description of your setup and the effect installing Rocksmith had.

It would help knowing what audio interface you're using as well. Click playback tab, find your audio interface, right click and "set as default device".

If you're just trying to get all the sound from your machine to come out from one of the outputs on your interface then you can do that by just opening control panel, going to sound. Hard to troubleshoot this further without understanding what kind of setup you're going for. So when you say "I can no longer use my external interface for audio output" what do you mean exactly? I'm interpreting that as you using your interface to output Windows sound and upon installing Rocksmith you lost all sound from your machine. Rocksmith outputs to the device you have set as the default output device in windows sound settings. Rocksmith doesn't force your output to any device. I use an external interlace and it works fine.
